Hopi Blue Corn Pancakes

“Burkefield Manor” Blue Berry Thyme Pancakes

Serves: 6 to 7

1 3/4 c blue corn meal
3/4 c white flour
1 TBS baking powder
1/2 tsp salt
2 TBS sugar (or a pinch stevia)
4 TBS melted butter
2 eggs
2 c milk
chopped fresh thyme, plenty (the Burkefield touch!)
blueberries (or dried cherries work well, chopped)

Combine dry ingredients. Beat eggs with milk, slightly, carefully add melted butter.
Add liquid to dry ingredients and combine.
Let sit 5 minutes before cooking on medium griddle.
